Garbanzo, Tomato, Avocado & Cilantro Salad

Ingredients

1 can garbanzo beans drained & rinsed

1 cup diced tomato

1/2 cup green onion chopped

1 large bunch cilantro chopped

1 avocado diced

DRESSING:

3 T fresh lime juice

2 tablespoons lime or lemon EVOO

1/4 tsp ground Chipotle chile powder

1/2 tsp mild chile powder

1/2 tsp ground cumin

1/2 tsp onion powder or onion juice

salt & freshly ground pepper

Directions

In a small colander, rinse garbanzos till all foam is gone. Drain well.

Combine all dressing ingredients in bottom of large bowl. Whisk to combine well. Add beans & let marinate in dressing for at least one hour.

Add remaining ingredients, season & serve.
